Un mondo di squisite lusinghe
Colonne di pietra a calce a cui è fissata una tettoia di legno bianco. In mezzo, grandi candele in vaso di vetro, poggiati su panche basse, creano un’atmosfera misteriosa. Tre ulivi verdi, piantati in vasi bianchi, conversano con le tamerici della spiaggia. Guardando la luna, che fa un bagno di luce al golfo del Grikos, si sente il frangersi delle onde. La brezza della sera rinfresca proprio nel momento in cui, sedotti dalla semplicità del paesaggio, si cerca di passare un’ordinazione. L’«Apocalypsis» non è il solito ristorante. Quando si arriva, si ha la sensazione di essere l’invitato di un amico la cui casa in campagna si trova nel posto più magico del mondo.
Il menù ha il profumo di una passeggiata estiva in Grecia. Lo chef come un esperto capitano che conosce i punti più belli per un tuffo, ci guida in un mondo segreto di sapori, e riesce a combinare armonicamente i sapori casalinghi greci con il suo estro creativo. Riporta alla luce ricette trascurate come il trachanàs e lo juvetsi ai frutti di mare, libera aromi esplosivi, come i fichi cotti nel vino dolce, e propone con dinamismo piatti che in futuro costituiranno la spina dorsale della cucina greca creativa. Un esempio lampante, il lacerto alla «tataki», con tonno fresco che anziché essere accompagnato da wasabi, lo troviamo con un gelato di mostarda piccante fatto a mano.
Naturalmente, il ruolo principale nella qualità dell’accurato menù, dalle scelte limitate e le geniali squisite combinazioni, è svolto dalla stagionalità degli ortaggi e dalla freschezza delle materie prime. I pesci e i frutti di mare, oltre che locali, provengono soprattutto dalle isole di Leros e di Kalimnos, mentre le carni scelte provengono da fattorie modello della Macedonia. Il segreto della gustosità originale dei piatti è la volontà dello chef di evitare le spezie. Al contrario, seguendo le ricette degli antichi predecessori, attribuisce una preferenza quasi maniacale alle benefiche erbe aromatiche che si procura cogliendole sia nel giardino dell’albergo, sia negli orticelli vicini. L’origano, la lavanda, il rosmarino, il finocchio, la menta, hanno il loro punto d’onore, offrendo un autentico gusto naturale alle pietanze.
